Pip’s Cafe & Provisions | Greenport, NY
October 2024 - Present) General Manager
Pip’s Cafe & Provisions is located on Main Street in Greenport, NY. In October of 2024, after a management change, Nikolaos came in as general manager of the cafe. With his capability to switch between front-of-house and back-of-house operations, he was uniquely suited for this role. His first time in a role of this caliber, and guided by an exceptional team of mentors, Pip’s Cafe & Provisions transformed into the “third space” for many Greenport residents and attracted tourists from New York City and beyond. With a massive renovation and menu overhaul in March 2025, Pip’s turned a new chapter in preparation for its one-year anniversary.
Silver Sands Motel & Beach Bungalows | Greenport, NY
(June 2024 - Febuary 2025) Sous Chef
Silver Sands Motel & Beach Bungalows is a hotel located in Greenport, NY, at the tip of the North Fork of Long Island. After a year's break from the restaurant world, Nikolaos returned to the kitchen to join his former co-worker, Chef Fintan O’Hara. Nikolaos initially started at Eddie’s Oyster Bar, a seasonal restaurant on the property of the hotel. Right on the water, Eddie’s provided a dining experience that was unlike any other in the region. With quality ingredients from local farms and oysters grown on the property, Nikolaos experienced a side of the culinary world that he had not experienced yet. After the closing of Eddie’s for the season, Nikolaos came back to work on Nookies at Night, a dinner menu at the 23-seat diner also located on the property. While his focus has shifted towards Pip’s Cafe & Provisions, he still assists in the culinary operations at Silver Sands.

Fishmonger | Atlanta, GA
(December 2022 - May 2023) Sous Chef
Fishmonger, located in Atlanta, GA, is a seafood and seafood butcher shop. While training at their original location in the Virginia Highlands, he was able to work with a lot of fish from the area (red snapper, steelhead trout, halibut) and the oysters of the region. This was a great way to discover a new perspective on how to interact with these ingredients that others in the south might push to the side. As a junior sous chef, he was tasked with managing not just the kitchen day to day activities, but also big-picture ideas and implementing methods to keep the restaurant organized. On top of all this, with the restaurant staff being so small, he also oversaw the FOH side of things.

The Four Horsemen | Brooklyn, NY
(May 2021 - August 2021) Externship
The Four Horsemen serves the Williamsburg neighborhood of Brooklyn, NY. This one Michelin-starred wine bar served as Nikolaos’ externship site as he pursued a culinary arts degree from The Culinary Institute of America. While the main focus of the restaurant is its wine selection; the diversity and quality of the food and flavors are not overlooked. Ingredients are chosen based on seasonality and peak quality in said season. Every dish that gets put on the menu will be meticulously tested in every way possible, sometimes not being put on at all. While working at The Four Horsemen, Nikolaos worked as part of the lunch team mainly working their konro grill and ovens. However, when needed he stepped in to fill the role of garde manager and desserts. The discipline that each team member had is reflected in Nikolaos’ work ethic and organization.
